I have been experimenting cooking with coconut. I hear it is very healthy. I was lucky enough to receive some Coconut products made by Let's Do Organic from Edward & Sons Trading Co. Keep in mind I have not baked much with coconut flour or any coconut products. So far I have found that for some reason most recipes call for alot of eggs when baking with coconut flour. I have also noted that coconut flour really absorbs alot of liquid from a recipe. This picture above shows a Vegan and Gluten-Free Carrot Cake I made that turned out really well.
